LYCHEE & BASIL COLLINS

Enjoy a refreshing take on a classic gin cocktail with this recipe for Lychee & Basil Collins, developed by our guest creator, mixologist and flavour expert, Pritesh Mody. The sweet, aromatic flavour of lychee fruit is expertly balanced with the sharp lemon, then rounded off with London Essence White Peach & Jasmine Crafted Soda, and a sprig of basil for a herbal finish.

INGREDIENTS

40ml gin
10ml lychee syrup from a tin
15ml lemon juice
100ml London Essence White Peach & Jasmine Crafted Soda

GLASS

Highball

GARNISH

Basil leaf, ideally Thai

METHOD

Add a generous amount of cubed ice to a chilled highball glass, then pour in your gin of choice. Next, add a dash of lychee syrup from the tin and a squeeze of lemon juice, before topping up with London Essence White Peach & Jasmine Crafted Soda. Stir well before garnishing with a few basil leaves –we recommend the Thai variety, if available.
