40ml rum or 60ml non-alcoholic rum
20ml lime juice
15ml sugar syrup
15ml coconut milk
8 fresh mint leaves

METHOD

Add a generous handful of large ice cubes into a chilled highball glass. Measure all of your ingredients – except the soda – into a cocktail shaker and shake lightly for 10 seconds.
